Guyanese Channa (Chickpeas)

Channa, or most commonly known as chickpeas in North America, is a healthy, quick, and affordable meal. A can of chickpeas can be purchased for a relatively cheap price ($1 or $2) at most grocery stores. Chickpeas are a nutrient rich food, which is a great source of fiber, protein, and folate. For those running short on time, Channa can be prepared in 10-15 minutes. Enjoy!

Ingredients

Quantity

Chick peas, Cooked

1 can / 2 cups / 500ml

Green Onions

5 heads, finely chopped

Garlic

3 cloves, finely chopped

Canola Oil

1 tbsp.

Salt

½ tsp.

Basil, Dried

1 tbsp.

Carrots

1 cup, chopped

Onion

½ , chopped

Cayenne Powder

Pinch

Water

⅓ cup

Directions:

Add oil to a sauté /frying pan on medium heat. When oil is hot add the Onions. Cook for 2 to 3 minutes. Add chickpeas with carrots, garlic, green onion, salt, basil 1/3 cup water. Add cayenne powder. Cook for 5-10 minutes or until all the water has evaporated and chickpeas are soft.
